This is the recipe for a classic Italian Easter bread. It's traditionally plaited and decorated with hard boiled eggs, plain or coloured. A stunning centrepiece for your Easter table.

  • 770g strong white bread flour
  • 100g caster sugar
  • 14g dried active baking yeast
  • 250ml milk
  • 1 teaspoon salt
  • 4 eggs
  • 125g butter, room temperature
  • 1 egg mixed with 2 teaspoons water, for brushing
  • 3 hard boiled eggs, to decorate

MethodPrep:30min ›Cook:30min ›Extra time:2hr30min curing › Ready in:3hr30min

  1. Place flour, sugar, yeast, milk, salt, eggs and butter in a stand mixer fitted with the dough hook.
  2. Start the mixer on speed 1 and mix for 3 minutes. Then, turn to speed 2 and mix for 8 minutes or until you reach a soft but compact dough. If you don't have a stand mixer, knead vigorously will your hands for 10 minutes until you reach a smooth and soft dough.
  3. Cover in cling film and chill overnight in the fridge for a well risen bread. Otherwise, place in a warm place, like the oven with the light on, for 2 hours.
  4. Once risen, divide dough into 3 equal sized balls and let stand for 10 to 20 minutes.
  5. Roll each ball into a snake. Make a loose plait with the 3 snakes so the dough has room to rise without losing its shape. Transfer to a lightly greased ring cake mould and pinch the edges to seal. Cover with a damp cloth and let rise for 90 minutes to 2 hours.
  6. Preheat the oven to 200 C / Gas 6.
  7. Brush the bread with the egg and water. Then, bake in the preheated oven for 30 minutes or until soft and well risen.
  8. Remove from the oven and let the bread cool completely. Decorate with the eggs, placing in the middle, and serve.

Who taught you this recipe?

I learned to make the Easter Bread from my mother-in-law, Filomena Laurenza Traficante. The only change from her recipe is the use of eggs. She used to put a couple raw whole eggs on top of each loaf, before baking them.

How long has this recipe been passed down through your family?

The recipe must have been in Filomena’s family for a couple generations. She brought it with her from the small town of Rionero in Vultura, Italy, the Region of Basilicata. It is a very simple, hearty recipe, typical of the agricultural and mountainous area where she lived. It is a typical type of bread to dip in coffee or milk, and that’s what her children loved to do.

When does your family use this recipe?

The tradition calls for making this “bread/cake” during the Easter season. However,I often make it a couple times a year, for Easter and also for Christmas.

What is your favorite memory of making this recipe?

Each time I make this “bread” I have fond memories of the first time Filomena taught me the recipe.

Having no formal education, she had memorized the ingredients/directions and she explained each step …in her dialect. I sat there with pen and paper to record the recipe for my future use. And I am happy I did.

Ingredients:

1 package active dry yeast

Optional – 1 cup dark/light raisins, or dry cranberries, as preferred.

4 1/2 cups all-purpose flour, plus more as needed

Preparation:

Using a large mixing bowl, dissolve the yeast in the warm water with a pinch of sugar let sit for about 10 minutes. Mix in the rest of the ingredients, except for the flour. Then stir in the flour, one cup at a time, until you have wet, sticky dough.

Place dough on a lightly floured surface and knead for about 5 minutes, adding flour as needed to keep from sticking. Knead until dough is smooth and elastic. Place in a lightly oiled bowl. Lightly oil the surface of the dough, and cover with damp towels. The dough needs to rise until double in size – about 1½ to 2 hours. (Keep the dough warm so it rises).

When ready, punch dough down a couple times, then place onto a lightly floured surface divide in four pieces. Shape into four small oval loaves, or whatever shape you desire. My preference is to cut each piece and braid it into a traditional Easter bread appearance.

Place loaves on baking sheets. Cover very loosely with plastic wrap, and let rise for 2 hours.

Bake at 350 degrees F for 25 minutes or until golden brown.

Once the breads cool, you can leave them plain, as is, or frost them with a simple lemon icing.

When dough has risen, punch down and remove from bowl onto a lightly floured wooden board. To make basic shape that weaves in 1 egg, cut off 2 pieces of dough about the same size (about 150-g/5-oz pieces). Roll pieces out into ropes about 2.5 cm (1 inch) thick using fingers and palms. While rolling, if you feel any large air bubbles in dough pierce them with a knife. If you find you have too much flour on your hands and board, which can make rolling difficult, lightly wet hands to get a better grip.

Be sure eggs are washed and completely dry before putting together loaves. While working on each loaf, keep remaining dough covered with plastic wrap to keep it moist.

To make loaf, take first rope and loop dough in a U shape. Nestle egg, standing upright, in centre of loop, right in curve. Fold dough over itself, as if creating a braid, and making sure egg is tightly wound in dough. Create one or two more twists depending on length of dough ropes.

Roll second rope out slightly thinner, then lay it on top of first piece, creating a second U around egg. Again, fold dough over itself to create a twist and then a second twist. Pinch off ends and meld into bottom piece. You can use a dab of water to make 2 ropes stick together at ends or underneath twists.

Place on a baking sheet (the one you will use to bake them) to let them proof.

A similar shape can be created with 2 eggs. In this case, use 2 slightly larger pieces of dough to roll out into ropes. Make U shape with first rope and nestle first egg into curve. Twist rope twice, making sure egg is snug in dough. Place a second egg against second loop and make a third loop around it. Repeat with upper rope of dough.

To make a wreath shape, use even larger pieces of dough. Create a long twisted rope of dough with 4 or 5 eggs. Once base rope, with eggs, is complete, move it into a large circle and pinch ends together to complete that circle. A longer second rope can now be woven around the top of the wreath, twisting it between the eggs.

Let loaves rise, covered by towel, until almost doubled in size.

Heat oven to 200 C (400 F) and bake for 20 to 30 minutes, depending on oven, turning baking sheet at halfway mark, until bread is lightly golden and sounds hollow inside when tapped.
